Tuscan-Style Roasted Chicken with Basil, White Beans, and Tomatoes

Ingredients:
- Chicken
- 100 4-ounce boneless, skinless chicken breast halves
- 2 ounces olive oil
- 4 ounces red wine
- 4 ounces fresh thyme, chopped
- 1 ounce salt
- 1 ounce pepper
- White Bean, Basil and Tomato Sauce
- 10 pounds tomatoes, cored
- 2 ounces olive oil
- 8 ounces garlic cloves
- 3 pounds cooked white beans
- 1 ounce salt
- 1 ounce pepper
- 4 ounces fresh basil, chopped
Preparation:
- Combine all ingredients together. Marinate for 4 hours. Grill chicken on one side and finish in a 350 degrees Fahrenheit oven, until chicken reaches internal temp of 165 degrees Fahrenheit.
- Rub tomatoes and garlic with olive oil. Roast tomatoes in a 325 degrees Fahrenheit oven for 30 minutes and roast garlic in 325 degrees Fahrenheit oven for 15 minutes. Purée tomatoes and garlic and fold into remaining ingredients.
- Spoon beans onto plate, top with chicken breast, and sprinkle with fresh chopped basil.
